Ingredients
225g butter, softened
200g caster sugar
2 eggs
2 tsp baking powder
230ml full cream milk
Sugar Icing
1 cup icing dugar
1 or 2 tbsp milk
1/2 tsp vanilla extract (optional)
Method

Preheat oven to 180C and line a muffin tray with muffin liners

Beat butter and until fluffy and creamy. Then, add eggs and vanilla and continue to beat until fluffy.

In another bowl, combine flour and baking powder and add it to the wet ingredients. Mix until combined.

Add in the milk and mix until combined.

Scoop your batter into the prepared muffin liners about 3/4 of the way.

Bake in the oven for 18-20 mins or until skewer comes out clean.

Leave in tray for a couple of mins before transferring to wire rack to cool.

Once cooled, drizzle sugar icing over the top and enjoy!
