These gluten free cookies are sweet, loaded with chocolate chunks and a whole lot of love! Makes 9 gluten free chocolate chip cookies that are perfectly crisp on the outside, soft and chewy on the inside.
Our gluten free cookie recipes:
INGREDIENTS
115g unsalted butter (room temperature)
150 brown sugar
50g white sugar
1 egg
2 tsp vanilla extract
315g Gluten Free Nomad 1-to-1 Baking Flour
1 tsp baking powder
1 tsp bicarbonate soda
1 tsp salt
150g white chocolate chips + extra for drizzle
100g M&M's (or other gluten free chocolate you like)
2-3 tbsp of sprinkles
METHOD

Preheat oven to 160°C

Mix together butter, brown sugar and white sugar to form a paste like mix

Mix in egg and vanilla extract

Add in flour, baking powder, bicarbonate soda and salt and mix in to form a dough (you may like to use your hands)

Once a dough is formed, add in chocolate chips and M&M's

Roll in to 9 balls, place on to oven tray and push down very lightly (they do expand so spread out accordingly)

Bake for 10-12 mins

Remove from oven and let them cool for about 15-20mins

Melt the extra white chocolate chips and pour in to piping bag

Drizzle melted chocolate over cookies and evenly spread sprinkles amongst the cookies

Let them set and then enjoy!
