Ingredients
300g Gluten Free Nomad's 1:1 All Purpose Baking Flour
1.5 tsp instant yeast
1 tsp salt
2 tbsp extra virgin olive oil
1 cup warm water (37°C)
Method

In a large bowl, add in the water and oil

Add flour, yeast and salt

Mix together to form a sticky wet dough. If you notice your dough isn't wet and sticky, add in a little more warm water (1 tbsp at a time until your dough is sticky)

Transfer dough on to a sheet of baking paper and place another sheet of baking paper on top

Use a rolling pin to spread the dough to form a rectangle (approx. 30cm long)

Roll the dough in to a log (by lifting the long end)

Rest in a warm spot for 45min to 1h until the dough has doubled in size

Preheat oven to 220°C (if you want the bread to rise, you need to create steam by placing ice cubes on the bottom shelf)

Generously brush with oil and score the top of the loaf with a sharp knife

Bake for 30min until golden brown crispy

Immediately transfer to a wire rack to cool so that the crust stays crispy
