Ingredients:
Buns
375g warm milk (37°C)
1 egg
1 tbsp yeast
50-75g sugar (we used about 60g in ours and it wasn't sweet)
50g oil
2 tsp mixed spice or speculaas
finely grated zest of 1 lemon or orange
125-150g sultanas or choc chips
Crosses
50g Gluten Free Nomad 1:1 All Purpose Baking Flour
75g water
Sugar Syrup
2 tbsp warm water
2 tbsp sugar
Method

Mix flour, yeast, sugar, spice and zest

Add wet ingredients - butter, milk and egg

Combine and knead for 4-5minutes, scrape sides and knead for another minute

Place dough in a bowl and cover to let the dough rise and double in size

Add in sultanas or choc chips and mix well

Using wet hands, roll into balls approx. 100-125g

Shape 1-1.5cm apart

Mist with water and cover well with cling wrap

Let the dough rise again to about 50%

Preheat oven to 180°C

In a separate bowl, mix flour and water and add to a piping bag

Pipe crosses on the hot cross buns

Bake in oven for 22 minutes

Allow to cool for about 10 minutes

Mix water and syrup. Use a pastry brush and brush the warm syrup over the hot cross buns while they're warm.
