These honey cookies are a warm, comforting treat with a naturally sweet flavour and soft, tender texture. Made with our Gluten Free Nomad flour, they're perfect for anyone looking to enjoy a classic cookie without the gluten. Ingredients
1 3/4 cup Gluten Free Nomad All Purpose Flour
1 tbsp baking powder
1 teaspoon ground cinnamon
1/2 tsp salt
115g unsalted butter
2/3 cup white sugar
2 tbsp honey
1 egg
For cinnamon sugar topping
3 tbsp white sugar
1 tbsp ground cinnamon
Method

Preheat oven to 180 C and line 2 trays with baking paper

In a medium bowl make the cookie dough - mix together the Gluten Free Nomad flour, baking powder, cinnamon and salt. Then, set aside.

In another bowl, use a mixer (hand mixer or electric beater) and beat the sugar and butter until it becomes creamy. Beat in the honey and egg. Scrape sides of bowl as needed.

Add the flour mixture to the butter mixture and mix until a dough forms. Keep in mind the dough will be slightly sticky but if it is too sticky add a little extra flour (no more than 1 tablespoon).

Make the cinnamon sugar topping - mix together the sugar and cinnamon and set aside.

Shape the cookies - roll about 1 tablespoon of dough and form into a ball. Then, coat them in the cinnamon sugar topping and place them on the baking trays about 4cm apart.

Bake the cookies for 10-12 minutes or until golden brown.

Remove from oven and let them cool on the tray for 2 mins, then transfer to wire rack to cool completely.
