Ingredients
For the Sticky Date Pudding
-
60 g unsalted butter, softened, plus extra for greasing
-
200 g pitted dates
-
300 g water
-
2 tsp bicarbonate of soda
-
170 g caster sugar
-
3 eggs
-
1 tsp natural vanilla extract
For the Butterscotch Sauce
-
250 g cream
-
200 g brown sugar
-
130 g unsalted butter, cut into pieces
-
1 tsp natural vanilla extract
Method
1. Prepare the Dates
Preheat your oven to 180°C (160°C fan-forced). Grease a baking dish with butter.
Place the pitted dates and water in a saucepan over medium heat. Bring to a gentle simmer and cook until the dates soften. Remove from the heat, stir in the bicarbonate of soda and allow the mixture to cool slightly.
2. Make the Pudding Batter
In a large mixing bowl, beat the softened butter and caster sugar together until light and creamy.
Add the eggs one at a time, mixing well after each addition. Stir in the natural vanilla extract.
3. Combine the Ingredients
Add the softened date mixture to the butter and sugar mixture, stirring until well combined.
Gently fold in the Gluten Free Nomad All Purpose Baking Flour until the batter is smooth and evenly mixed. Avoid overmixing.
4. Bake the Pudding
Pour the batter into the prepared baking dish and smooth the surface.
Bake for approximately 30–40 minutes, or until the pudding is risen and a skewer inserted into the centre comes out clean or with a few moist crumbs.
Baking time may vary depending on the size and depth of your baking dish.
5. Make the Butterscotch Sauce
While the pudding is baking, place the cream, brown sugar and butter in a saucepan over medium heat.
Stir until the butter has melted and the sugar has dissolved. Bring to a gentle simmer and cook for approximately 3–5 minutes, stirring occasionally, until the sauce is smooth and slightly thickened.
Stir in the vanilla extract, then remove from the heat.
6. Serve and Enjoy
Allow the pudding to cool for a few minutes before serving.
Pour the warm butterscotch sauce generously over each portion. Serve with vanilla ice cream or whipped cream for a delicious, comforting gluten free dessert.
