Ingredients
2 1/2 cups plain flour
2 tbsp cocoa powder
2 tsp bicarbonate of soda
1 1/2 cups caster sugar
1 cup milk
1 tbsp lemon juice
1 1/2 cup vegetable oil
2 eggs
1 tsp vanilla essence
red food colouring (amount will vary depending on brand)
Frosting
375g cream cheese, softened
150g butter, softened
1 tsp vanilla essence
2 cups icing sugar
Method

Preheat oven to 160 °C. Line your baking tray and set aside.

Sift flour, cocoa and bicarb soda into a large bowl. Then, mix in the sugar and make a well in the middle.

In another bowl, whisk together the milk, lemon juice, oil, egg, vanilla essence and red food colouring. Then, pour mixture in to the well and stir until mixture is smooth and combined.

Pour into baking tray and bake for about 1 hour or until a skewer comes out clean.

Leave in pan for about 10 mins and then transfer to a wire rack to cool.

Make the frosting by beating together the cream cheese, butter and essence until creamy. Gradually add in the icing sugar until combined.

Once cake is cooled, cut in half horizontally and place the base of the cake on serving plate.

Spread about 1/3 of the frosting on the bottom half and then top with cake top. Spread the rest of the frosting over the top and sides.
