Ingredients
3 eggs
1 cup sugar
1/2 cup vegetable oil
1/2 cup of yoghurt
125g unsalted butter
1/2 cup orange juice
1/4 cup orange zest
1 tbsp vanilla sugar
1 tbsp packet of pure mahlepi
2 tbsp baking powder

Method
  1. Preheat oven to 180 and line two baking trays with baking paper.
  2. In a medium bowl, using an electric/stand mixer, cream butter and sugar together until light and fluffy.
  3. Add your eggs, one at a time ensuring they're mixed well.
  4. Mix in the vegetable oil, yoghurt, orange juice, zest, vanilla sugar and mahlepi. Stir until everything is well combined.
  5. In a separate bowl, whisk together Gluten Free Nomad All Purpose flour and baking powder.
  6. Then, gradually add the dry ingredients to the wet mixture and combine until a soft, slightly sticky dough forms.
  7. Shape your koulourakia and arrange on prepared trays, leaving space between them.
  8. Optional - if you like, brush with a little beaten egg and sprinkle with sesame seeds.
  9. Bake for 15-18 mins or until lightly golden on the top and bottom.
  10. Let them cool for a few minutes before transferring to a wire rack.
