Ingredients
100g icing sugar
200g unsalted butter (cut into small cubes)
380g Gluten Free Nomad's 1:1 All Purpose Baking Flour
2 eggs
5-6 granny smith apples, peeled and chopped into cubes
20g fresh lemon juice
30g raw sugar (and extra for topping)
30g corn flour
pinch of salt
1 pinch of cinnamon
1/2 tsp nutmeg
egg yolk (to brush)
Method

Using an electric beater, mix together sugar, butter, flour, eggs and salt until combined and then form into a ball.

Dust your work surface with flour and divide your pastry into 2 balls with 1 being slightly larger

Wrap them in plastic and chill for about 30 mins

Roll out your larger ball of pastry in a circle (about 4-5mm thick) and line pie dish (23-24cm). Then, cover and place back into the fridge.

In a separate bowl, add the apples, lemon juice, raw sugar, cornflour, cinnamon and nutmeg. Mix together until apples are coated and set aside for about 15 mins.

Preheat oven to 200°C

Take out your pie dish and add apples to the dish.

Roll out remaining pastry, lay over the apples and seal the edges of the pie (if using a 23cm dish, seal the edges over the rim of the dish).

Brush the pie with the egg yolk and sprinkle raw sugar over the top.

Cut 3 slices on top of the pie in the middle.

Bake for 15 min at 200°C and then reduce to 180°C and bake for 20-25min or until golden brown.

Allow to cool for at least 1 hour before serving.
