This recipe will make approximately 24 cookies.

Ingredients
380g Gluten Free Nomad's 1:1 All Purpose Baking Flour
140g white sugar
100g brown sugar
1 and 1/2 tbsp cornflour
1/2 tsp bicarb soda
1/2 tsp sea salt
140g unsalted butter, cold and cut into cubes
3 eggs
120g milk chocolate chips
100g white chocolate chips
100g dark chocolate chips
Pistachio spread or nutella

Method
  1. Preheat oven to 180°C and line baking trays with baking paper
  2. Mix flour, white and brown sugar, cornflour, bicarb soda and salt until well combined
  3. Add butter and mix until well combined (you may like to use your hands or and electric mixer)
  4. Add eggs and mix until a dough forms
  5. Add chocolate chips and knead for about 30 seconds to 1 minute. If the mixture is super wet, you can add a little more flour.
  6. Transfer dough onto a lightly floured worksurface and form into a ball
  7. Using damp hands, roll 1 tablespoon of dough in to balls and place on to prepared baking trays (leaving enough space for them to spread when baking)
  8. Bake for 12-14 mins. Remove immediately from oven and using a small spoon, make an indent in the middle of the cookie.
  9. Cool on trays for 10 mins and then transfer to wire racks and cool completely.
  10. Fill indents of cooled cookies with a teaspoon of your choice of spread. Then drizzle with chocolate and set aside to set.
